Pumpkin Knot Rolls

Ingredients

  • 2 packages (1/4 ounce each ) active dry yeast
  • 1 cup warm whole milk (110° to 115°)
  • 1/3 cup butter, softened
  • 1/2 cup sugar
  • 1 cup canned pumpkin
  • 3 large eggs, divided use
  • 1-1/2 teaspoons salt
  • 5-1/2 to 6 cups all-purpose flour
  • 1 tablespoon cold water
  • Sesame or poppy seeds, optional

Country White Bread

Ingredients

  • 2 packages (1/4 ounce each) active dry yeast
  • 2 cups warm water (110° to 115°)
  • 1/2 cup sugar
  • 2 teaspoons salt
  • 2 large eggs
  • 1/4 cup canola oil
  • 6-1/2 to 7 cups all-purpose flour

Directions

  1. In a large bowl, dissolve yeast in warm water. Add sugar, salt, eggs, oil and 3 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough.
  2. Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
  3. Punch down dough. Divide in half and shape into loaves. Place in two greased 9×5-in. loaf pans. Cover with kitchen towels; let rise in a warm place until doubled, about 1 hour. Preheat oven to 375°.
  4. Bake until golden brown, 25-30 minutes. Remove from pans to wire racks to cool.

Roasted Veg with Nutritional Yeast

Ingredients

  • 2 small heads of broccoli, cut into florets with some stalk attached, or 1 medium acorn squash, seeds removed, cut into ½-inch slices
  • 2 tablespoons virgin coconut oil, warmed to liquefy if needed
  • Kosher salt, freshly ground pepper
  • 2 tablespoons nutritional yeast

Directions

  1. Preheat oven to 425°.
  2. Toss vegetables with oil on a rimmed baking sheet to coat; season with salt and pepper. Roast until deep golden brown and tender, 20–25 minutes.
  3. Let cool slightly, then toss with nutritional yeast.

Quick Rise Buns

Ingredients

  • 2 ½ C warm water
  • 6 Tbsp sugar
  • 3 Tbsp yeast
  • 2 Tbsp oil
  • 6 C flour (can use white or wholemeal)
  • 2 tsp salt
  • 1 tsp baking powder

Directions

  1. Stir water, yeast, sugar and oil together. Leave for 5 minutes until it becomes frothy on top. Add flour, salt and baking powder. Mix well. Knead. Roll out if making a pizza base or shape for use as buns / bread / loaf. Paint with oil or milk (if you can be bothered). Bake at 200 degrees Celcius for 10-15 minutes.
