  • 5 pounds chicken (1 whole chicken)
  • 1 onion (peeled)
  • 1 large carrot (peeled)
  • 5 slices white bread (stale, crusts removed)
  • 1 pound walnuts (crushed)
  • 2 to 3 cloves garlic (crushed)
  • 3 teaspoons paprika (sweet)
  • 3 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • Garnish: paprika and whole walnut halves

Ingredients

STARTER
  • 1 cup King Arthur Unbleached All-Purpose Flour
  • 1/2 cup cool water
  • 1/8 teaspoon instant yeast
DOUGH
  • 2 1/4 cups King Arthur Unbleached All-Purpose Flour
  • 1 1/4 teaspoons salt
  • 2 teaspoons SAF Gold instant yeast
  • 1/3 cup granulated sugar
  • 1/4 cup (4 tablespoons) soft unsalted butter

FILLING
  • 3/4 cup dried cranberries
  • 3/4 cup walnuts
  • 1/2 cup Sticky Bun Sugar
TOPPING
  • pearl sugar or sparkling sugar, for decorating

Roasted Apple Bread

Ingredients

  • 2 to 2 1/2 cups chopped apple*
  • 1 teaspoon ground cinnamon
  • 2 tablespoons sugar
  • 3 1/4 cups King Arthur Unbleached Bread Flour or King Arthur Unbleached All-Purpose Flour
  • 1 cup King Arthur Premium Whole Wheat Flour or King
  • Arthur White Whole Wheat Flour
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon instant yeast
  • 1 3/4 cups cool water
  • 1 cup coarsely chopped walnuts or pecans
  • *Leave the apples unpeeled, if you like. Choose apples that stay a bit firm when baked, like Granny Smith or Cortland.

Apple Walnut Stuffed Pork Roast

Ingredients

  • 5 tablespoons butter
  • 1 apple – peeled, cored, and chopped
  • 1 small onion, chopped
  • 1 celery stalk, diced
  • 1/2 cup chopped walnuts
  • 1 cup unsweetened applesauce
  • 1 1/2 cups water
  • 5 cups coarse dry breadcrumbs
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • Kosher salt and fresh ground pepper to taste
  • 1 (3 pound) boneless rolled pork loin roast

Grilled Pork Chops With Peaches And Walnuts

Ingredients

  • 4 pork chops (I used boneless)
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1 peach washed and cut into slices
  • 1/2 cup walnuts, chopped in half
  • 1 tablespoon fresh rosemary leaves
  • 2 -3 sprigs of thyme
  • 2 tablespoons brown sugar

Directions

  1. Season the chops with salt and pepper to taste. Reserve.
  2. In a skillet over medium heat melt butter. Add peach slices and cook until lightly browned on both sides, about 2 minutes. Remove from pan and place on a plate.
  3. In the same skillet cook the chops on both sides until golden brown, about 5 minutes.
  4. Place peaches, walnuts, rosemary and thyme over the chops. Sprinkle with brown sugar. Cover and cook for 3-4 minutes.
  5. Serve immediately.
