  • 1 cup unsalted beef broth
  • 3/4 cup apple cider
  • 3 pounds sweet potatoes, peeled, cut crosswise into 1 to 1-1/2 inch pieces
  • 2 teaspoons minced garlic
  • 2 tablespoons maple syrup
  • 1 teaspoon minced fresh ginger
  • 2 tablespoon cornstarch dissolved in 2 tablespoons brandy or water

  • 1 large sweet potato, chopped into ½-inch pieces
  • 1 tsp. salt
  • 1 large onion, chopped
  • 1 large jalapeño, seeded and finely chopped
  • 2 cloves garlic, finely chopped
  • ¼ cup water
  • ½ tsp. dry mustard
  • ½ tsp. ground cumin
  • 1 tsp. chili powder

  • ½ cup creamy peanut butter
  • ¼ cup reduced-sodium tamari or soy sauce
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, pressed
  • ¼ teaspoon red pepper flakes
  • 2 tablespoons water
Roasted vegetables
  • 2 sweet potatoes, peeled and sliced into 1 inch long, ½ inch wide chunks
  • 1 red bell pepper, cored, deseeded, and sliced into bite-sized strips

  • 1 C . Baked Pumpkin Puree not pumpkin pie mix
  • 1/2 C . Vegetable Broth
  • 1/3 C . Raw Cashews soaked for 1-2 hours or for 20 minutes in boiling water
  • 3 T . Nutritional Yeast
  • 1 Clove of Garlic
  • 1/2 T . Lemon Juice
  • 1/2 tsp . Dijon Mustard
  • 1/2 tsp . Chipotle Flakes
  • 1/2 tsp . Smoked Paprika
  • 1/2 tsp . Liquid Smoke
  • 1/2 tsp . Sea Salt
  • 1/4 tsp . Turmeric for color
  • 1 C . Packed Kale Chopped with Stems Removed
  • 3/4 C . Tomato Diced
