Gluten-Free Citrus Sugar Cookies

Ingredients

For the cookies:
  • 1/2 teaspoon psyllium-husk powder
  • 1 1/2 teaspoon whole flax seeds
  • 1 teaspoon chia seed
  • 2 1/2 cups rice-based gluten-free all-purpose flour*
  • 2 tablespoons cornstarch
  • 1/4 teaspoon fine sea salt
  • 1 cup granulated sugar
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 large egg yolks
  • 1 1/2 teaspoon vanilla extract
  • 1/2 teaspoon finely grated lime zest
  • 1/2 teaspoon finely grated lemon zest
  • 1/2 teaspoon finely grated grapefruit zest
For the glaze and topping:
  • 1 cup confectioners sugar
  • 1/8 teaspoon ground cloves
  • 2 tablespoons butter, melted
  • 1/2 teaspoon finely grated lime zest, plus 2 1/2 teaspoon lime juice
  • 1/2 teaspoon finely grated lemon zest, plus 2 1/2 teaspoon lemon juice
  • 1/2 teaspoon finely grated grapefruit zest, plus 2 1/2 teaspoon grapefruit juice

Froot Loops Cake

Cake
  • 1 1/2 c. (3 sticks) unsalted butter, at room temperature, plus more for pan
  • 3 c. all-purpose flour, spooned and leveled, plus more for pan
  • 1 1/2 tsp. Kosher salt
  • 1/2 tsp. baking powder
  • 3 c. sugar
  • 1 (8-ounce) package cream cheese, at room temperature
  • 6 large eggs
  • 1 tbsp. lemon zest, plus 2 tablespoons lemon juice
  • 2 tbsp. orange zest
  • 2 tsp. pure vanilla extract
Froot Loops Streusel
  • 2 c. Froot Loops, plus more for serving
  • 1/3 c. all-purpose flour, spooned and leveled
  • 2 tbsp. sugar
  • 1 tbsp. lemon zest
  • 1/2 tsp. Kosher salt
  • 1/3 c. chopped cold unsalted butter
Citrus Glaze
  • 2 c. confectioners’ sugar
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. Kosher salt
  • 4 tbsp. fresh lemon juice

Citrus Strawberry Mocktail

Ingredients

  • 500 gm strawberry
  • 1/4 cup lemon juice
  • 1/2 cup orange juice
  • icing sugar as required
  • ice cubes as required
  • lemon slices as required
  • 1/2 cup sparkling water

Directions

  1. To prepare this beverage recipe, take a blending jar and put strawberries, orange juice, sparkling water, lime juice in it. Blend until you observe a combined mixture.
  2. Crush ice in a bowl and add into the bowl of sparkling water and gently stir.
  3. Take a lemon slice for garnish purpose and use the rest of the lemon and wipe around the rim of the glass to create moisture. Pour the icing sugar in a plate and roll the glasses, collecting the sugar onto the lime juice on the glass rim. Hang the lemon slice on the glass.
  4. Pour in the pink slush from the blender into the flute glass and serve. Your Citrus Strawberry Mocktail is ready.

Embellished Wreath Cookies

Ingredients

Sugar Cookies
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon baking powder
  • 1 stick (1/2 cup) unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1/2 teaspoon pure vanilla extract
  • 1 large egg, room temperature
  • Finely grated zest of 1 orange (about 1 tablespoon)
  • 2 cups unbleached all-purpose flour, plus more for dusting
  • 2 tablespoons brandy
Glaze
  • 2 cups confectioners’ sugar, sifted, plus more if needed
  • 1 large egg white
  • 1 to 2 teaspoons fresh lemon juice
Toppings
  • Candied ginger, finely chopped
  • Candied citrus, finely chopped
  • Pistachios (preferably Sicilian), finely chopped
  • Sugared edible flowers, such as rose petals and violets

Citrus Mint Cooler

Ingredients

  • 2-1/2 cups water
  • 2 cups sugar
  • 1 cup lemon juice (about 6 lemons)
  • 1 cup orange juice (about 6 oranges)
  • 10 mint sprigs
  • 1 bottle (32 ounces) ginger ale, chilled
  • Cold water
  • Ice cubes

Directions

  1. Place first five ingredients in a large saucepan; bring to a boil, stirring until sugar is dissolved. Cover; remove from heat and let steep until cool. Strain. Cover and refrigerate.
  2. To serve, fill chilled glasses or a pitcher with equal amounts of fruit juice, ginger ale and water. Add ice and serve immediately.
