Apple Pie Ice Cream

Ingredients

  • 1 cup whole milk
  • ¾ cup sugar
  • 2 cups heavy cream, divided
  • Pinch of salt
  • 1 vanilla bean, split lengthwise
  • 1 cinnamon stick
  • 6 large egg yolks
  • 1 tsp. vanilla extract
  • 1½ tbsp. unsalted butter
  • 3 large apples, peeled and thinly sliced (I prefer Granny Smith for cooking/baking)
  • 1 tbsp. sugar
  • ½ tsp. ground cinnamon
  • 1-2 tbsp. dark rum (optional)
  • 1 cup graham crackers, chopped small

Stacked Applesauce Cake

Ingredients

  • 3 c. all-purpose flour
  • 3 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 3/4 tsp. cinnamon
  • 3/4 tsp. nutmeg
  • 1/4 tsp. cloves
  • 3/4 c. unsalted butter
  • 1 1/2 c. granulated sugar
  • 2 large eggs
  • 3 tsp. vanilla extract
  • 3 c. unsweetened applesauce
  • Cinnamon Whipped Cream
  • 2 tbsp. Confectioners’ sugar (optional)

Hot Spiced Lemon Drink

Ingredients

  • 2-1/2 quarts water
  • 2 cups sugar
  • 1-1/2 cups orange juice
  • 1/2 cup plus 2 tablespoons lemon juice
  • 1/4 cup pineapple juice
  • 1 cinnamon stick (3 inches)
  • 1/2 teaspoon whole cloves

Directions

  1. In a 5-qt. slow cooker, combine the water, sugar and juices. Place cinnamon stick and cloves on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. Place in slow cooker. Cover and cook on low for 2-3 hours or until heated through. Discard spice bag.

Snickerdoodle Ice Cream

Ingredients

  • 1/3 cup white sugar
  • 1/2 cup packed brown sugar
  • 2 tsp ground cinnamon
  • 1 cup heavy whipping cream
  • 1 1/2 cups half and half
  • 2 tsp pure vanilla extract

Directions

  1. Whisk all ingredients together in a bowl to combine well. Cover and chill in fridge 2 hours or overnight.
  2. Pour mixture into a 1-quart ice cream maker and churn according to manufacturer’s instruction. Typically about 30 minutes.
  3. Immediately transfer to an airtight container and freeze until ice cream is “set.”
  4. Recipe may be doubled for a 2-quart ice cream maker.

S’mores Sandwich Cookies

Ingredients

  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 3/4 cup (packed) dark brown sugar
  • 2 tablespoons granulated sugar
  • 6 tablespoons honey
  • 1 large egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 16 ounces bittersweet chocolate, coarsely chopped (about 3 cups), divided
  • 24 marshmallows

Bourbon Cinnamon Glazed Ham

Ingredients

  • 1 c. Bourbon
  • 1 c. light brown sugar
  • 2 cinnamon sticks
  • 7 lb. Spiral Sliced Bone-In Baked Ham
  • ¼ c. yellow mustard
  • ½ c. brown sugar

Ingredients

  1. Preheat oven to 325 Degrees.
  2. In a medium saucepan, bring Bourbon, cinnamon sticks, and brown sugar to a simmer. Allow simmering for 15-20 minutes until sauce becomes slightly thickened. Set aside and allow to cool slightly.
  3. Place the baked ham inside desired roasting pan. Pour the glaze over the ham and even in between the ham slices, even the cinnamon sticks. Use a pastry brush and brush the ham with the yellow mustard, skin side. Sprinkle with brown sugar. Cover with aluminum foil completely. Bake for 2 hours or until internal temperature reaches 145 Degrees.
