Cauliflower Fritters

Ingredients

  • 1 large cauliflower, chopped
  • 1 egg
  • Salt and pepper
  • Flour
  • Vegetable oil or canola oil

Directions

  1. In the microwave, cook the cauliflower in a covered dish with two tablespoon of water until soft.
  2. Drain the cauliflower and mash with the back of a fork or potato masher.
  3. Add the egg, salt and pepper, and enough flour until you can form patties; about 1/4 cup.
  4. Add enough oil to coat the bottom of a skillet. Over medium high heat, brown the caulflower patties. Eat!

Vadouvan-Roasted Cauliflower with Harissa Chickpea Curry

Ingredients

  • 2 Fresno chiles, thinly sliced
  • ¼ cup Champagne vinegar
  • ¼ teaspoon sugar
  • 1½ teaspoons kosher salt, divided, plus more
  • 1 head of cauliflower, cut into small florets
  • ¼ cup olive oil
  • 2 tablespoons vadouvan or curry powder
  • 2 shallots, thinly sliced
  • ¾ cup vegetable oil, divided
  • 1 15.5-ounce can chickpeas, rinsed, patted dry
  • 1 medium onion, chopped
  • 1 1-inch piece ginger, peeled, finely grated
  • 1 garlic clove, finely grated
  • 1 teaspoon grated lemongrass
  • 2 teaspoons tomato paste
  • 1 teaspoon harissa paste
  • 1 13.5-ounce can unsweetened coconut milk
  • 1 tablespoon chopped cilantro stems, plus sprigs for serving
  • Steamed basmati rice (for serving)

Vegetable Tagine

Ingredients

  • 2 Tbs. olive oil
  • 4 shallots, chopped
  • 2 cloves garlic, minced
  • 1 1-inch piece peeled fresh gingerroot, minced
  • 1 stalk celery, chopped
  • 1 3-inch cinnamon stick
  • 1 1/2 tsp. ground coriander
  • 1 1/2 tsp. ground cumin
  • 1 1/2 tsp. paprika
  • 1 tsp. salt
  • 1 tsp. freshly ground black pepper
  • 1/8 tsp. cayenne pepper or to taste
  • 1 32-oz. can crushed or diced tomatoes

Cauliflower-Cashew Soup with Crispy Buckwheat

Ingredients

  • ½ cup olive oil, divided
  • 4 large shallots, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 2 bay leaves
  • 2 teaspoons fresh thyme leaves
  • Kosher salt
  • ½ cup dry white wine
  • 1 large head of cauliflower, cored, cut into small florets, stem chopped, divided
  • ¼ teaspoon cayenne pepper
  • ¾ cup plus 2 Tbsp. cashews
  • 6 cups (or more) vegetable stock, preferably homemade
  • Freshly ground black pepper
  • 2 tablespoons buckwheat groats
  • 2 teaspoons fresh lemon juice
  • ½ teaspoon paprika

Grilled Cauliflower Steaks and Scallions

Ingredients

  • 1 large head cauliflower
  • 6 tablespoons vegetable oil, divided, plus more for grill
  • 1 bunch scallions, trimmed
  • Kosher salt, freshly ground pepper
  • 1 1-inch piece ginger, peeled, grated
  • 1 garlic clove
  • ½ cup (packed) fresh cilantro leaves
  • 2 tablespoons fresh lime juice
  • Gochugaru (Korean red pepper powder), toasted black sesame seeds, and sesame oil (for serving)

BBQ Chickpea & Cauliflower Flatbreads with Avocado Mash

Ingredients

  • 12 oz. small cauliflower florets
  • 1 tbsp. extra-virgin olive oil
  • Salt
  • BBQ Chickpea “Nuts”
  • 2 ripe avocados
  • 2 tbsp. lemon juice
  • 4 flatbreads or pocketless pitas, toasted
  • 2 tbsp. roasted salted pepitas
  • Hot sauce, for serving

Directions

  1. On a large rimmed baking sheet, toss cauliflower with olive oil and 1/4 teaspoon salt; roast in 425 degree F oven for 25 minutes along with one-fourth recipe BBQ Chickpea “Nuts.”
  2. Mash avocados with lemon juice and pinch salt; spread all over flatbreads. Top with roasted cauliflower, chickpeas and pepitas. Serve with drizzle of hot sauce.

Roasted Cauliflower Salad

Ingredients

  • 1 medium head cauliflower (about 2 pounds), quartered, cored, and sliced 1⁄4 inch thick
  • 4 tbsp. olive oil
  • 2 tbsp. cider vingegar
  • 2 scallions, thinly sliced
  • 1/2 c. Unsalted Roasted Almonds
  • 1/4 c. golden raisins
  • 1/4 c. Dried Cranberries
  • 1 1/2 c. baby arugula
  • Kosher salt and pepper

Directions

  1. Heat oven to 425°F and place the oven rack in the lower third. On a rimmed baking sheet, toss cauliflower, 2 tablespoon oil, and 1⁄2 teaspoon each salt and pepper. Roast until tender and golden brown, 25 minutes.
  2. Meanwhile, in a bowl, whisk together vinegar, remaining 2 tablespoon oil, and 1⁄4 teaspoon salt and pepper. Toss in scallions, almonds, raisins, and cranberries. Let sit, tossing occasionally, while cauliflower roasts.
  3. Toss roasted cauliflower with almond mixture, then fold in arugula.
