Ingredients

Blueberry Compote:
  • 4 half pints blueberries
  • Juice of 3 limes 2 cups sugar
  • Cinnamon Streusel: 1/2 cup flour
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • Kosher salt
  • 2 ounces butter, cold and cubed
Ice Cream Base:
  • 4 ounces butter
  • 3 cups half and half
  • 3 egg yolks
  • 1/4 cup sugar
  • 1/4 cup brown sugar, packed
  • 3/4 teaspoon Kosher salt
  • 2 teaspoon vanilla extract

Ingredients

Blueberry Sauce:
  • 1 1/4 C blueberries, fresh or frozen
  • 1/2 C sugar
  • 1 Tb cornstarch
  • 1/2 C water
  • 1 Tb lemon juice (bottled is fine)
Graham Cracker Crust:
  • 1 prepared graham cracker crust
  • Cheesecake Ice Cream:
  • 1 1/2 C sugar
  • 2 C milk
  • 4 C heavy whipping cream
  • 2 tsp vanilla

  • 1 package (3.4 ounces) instant cheesecake or vanilla pudding mix
  • 1 quart heavy whipping cream
  • 2 cups milk

Lemon Blueberry Bread

Ingredients

  • 1/3 cup butter, melted
  • 1 cup sugar
  • 3 tablespoons lemon juice
  • 2 large eggs, room temperature
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup 2% milk
  • 1 cup fresh or frozen blueberries
  • 1/2 cup chopped nuts
  • 2 tablespoons grated lemon zest
GLAZE:
  • 2 tablespoons lemon juice
  • 1/4 cup sugar

Blueberry Crumb Cake

Ingredients

For the Streusel Topping
  • 1 cup all-purpose flour
  • 1/2 cup packed light-brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter (cut into tablespoons)
For the Cake
  • 4 tablespoons unsalted butter, softened, plus more for pan
  • 1 1/2 cups all-purpose flour (spooned and leveled), plus more for pan and 1 teaspoon for blueberries
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon allspice
  • 3/4 cup sugar
  • 1 large egg
  • 2/3 cup buttermilk
  • 1 1/2 cups blueberries

Blueberry Lemonade

Ingredients

  • 3 cup blueberry
  • 1/2 cup granulated sugar
  • 2 lemon wedges
  • 2 cup soda
  • 1 1/2 tablespoon lemon juice
  • 1 lime

Directions

  1. Peel the lemon rind from the lemon.
  2. Heat a pan over medium flame.
  3. Add the lemon rind, blueberries, sugar and 1 tbsp water. Bring to a boil.
  4. Simmer for 10 to 15 minutes over low flame and strain into a pitcher (or any container).
  5. Cover with a plastic wrap and keep it in the fridge for 2 to 3 hours.
  6. Add the soda and lemon juice.
  7. Stir gently and pour into ice filled glasses.
  8. Garnish with lemon wedges and blueberries. Serve chilled.
