Grilled Pork Chops With Blueberry Compote

Ingredients

Chops
  • 4 pork chops*
  • 1 C all-natural, unsweetened apple juice
  • 1 Tbsp salt
  • 1 Tbsp olive oil
  • Fresh cracked pepper to taste
Blueberry Compote
  • 1 C medium chopped onions
  • 1 C large peeled and chopped granny smith apples
  • 1 tsp butter
  • 2 tsp minced garlic
  • 1 C all-natural, unsweetened apple juice
  • 2 C fresh blueberries
  • 2 Tbsp balsamic vinegar
  • ¼tsp salt
Polenta
  • 6 C water
  • ¼ tsp salt
  • 1 C cornmeal
  • 2 Tbsp butter
  • Fresh basil for garnish

Maple and Spice Shrub

Ingredients

  • 2 cups roughly chopped, tasty apples
  • ½ vanilla bean
  • ½ cinnamon stick
  • 2 star anise
  • 1 piece nutmeg
  • 1 cup maple syrup
  • 1 cup raw cider vinegar
  • 2 tablespoons balsamic vinegar

Directions

  1. In a dry skillet toast the cinnamon, star anise, and nutmeg. In a 2-quart glass jar or bowl, gently muddle together the maple syrup the vanilla bean and the apples. Stir in the spices and the vinegars. Cover and let the shrub sit for 48 hours. Strain off all the solids and store the shrub in the fridge for up to 1 month.
  2. This shrub is delicious added to ginger beer or club soda and makes a perfect cocktail with whiskey and a squeeze of lemon.

Caprese Chicken

Ingredients

  • 1 tbsp. extra-virgin olive oil
  • 1 lb. boneless skinless chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 1/4 c. balsamic vinegar
  • 2 cloves garlic, minced
  • 1 pt. grape tomatoes, halved
  • 2 tbsp. freshly torn basil
  • 4 slices mozzarella

Directions

  1. In a large skillet over medium-high heat, heat oil.Season chicken with salt and pepper and cook until golden and cooked through, 6 minutes per side. Transfer to a plate.
  2. Add balsamic vinegar to skillet, then add garlic and cook until fragrant, 1 minute. Add tomatoes and season with salt. Let simmer until soft, 5 to 7 minutes. Stir in basil.
  3. Return chicken to skillet and nestle in tomatoes. Top with mozzarella and cover with a lid to melt.
  4. Spoon tomatoes over chicken and serve.

Balsamic Glazed Chicken

  • 3 cloves garlic, minced
  • Kosher salt

  • 2 c. baby red potatoes, halved (quartered if large)
  • 2 tbsp. sprigs fresh rosemary, plus 1 tbsp. chopped
