Mediterranean Braised Beef

Ingredients

  • 1 beef Shoulder Roast Boneless (2-1/2 to 3 pounds)
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 2 small onions, halved, sliced
  • 4 medium shallots, sliced
  • 1/4 cup chopped pitted dates
  • 1/2 teaspoon salt
  • 1/4 to 1/2 teaspoon black pepper

Frozen Raspberry Layer Cake

Ingredients

  • 2 frozen pound cakes
  • 3 c. vanilla ice cream
  • 4 c. raspberry sorbet
  • 1 pt. fresh raspberries
  • 3 tbsp. Chambord

Directions

  1. Prepare the pan: Trace and cut out a 9-inch circle from parchment paper and fit it into the bottom of a 9-inch springform pan.
  2. Cut out a 3- by 27-inch strip of parchment and fit around the inside of the pan. Tape to secure parchment paper and set aside.
  3. Assemble the cake: Cover the bottom of the pan with a single layer of pound cake slices and spread the ice cream evenly over the cake. Freeze until ice cream hardens — about 25 minutes. Spread 2 cups sorbet over the ice cream followed by another layer of pound cake slices.
  4. Return cake to the freezer for 10 minutes. Combine the raspberries and the Chambord together in a small bowl. Remove the cake pan from freezer and place the berries evenly over the cake.
  5. Top with a final layer of pound cake and the remaining sorbet. Wrap tightly with plastic wrap and freeze until firm — at least 4 hours.

Hershey’s Kiss Fans Are Really Missing the Point

Hershey’s Kiss fans have a tip for the chocolate maker: Bring back the tips.

After a Facebook cookie-baking group noticed that the tips were missing from recent batches of Hershey’s Kisses – right in the midst of the holiday-cookie-baking season – the chocolate maker tried to make things right with the group by donating “a number of our iconic baking items as a thank you for their love of the Hershey’s brand and our Kisses and to heartwarm their holidays,” a Hershey’s spokesperson told Lebanon Daily News.

Jeff Beckman, Hershey’s director of corporate communications, told the Lebanon, Pennsylvania, newspaper the company was currently looking into the broken-tip situation, in which the dollop-shaped candies’ traditional pointy tips were turning up flat or jagged.

“We understand that bakers’ expectations are high for an iconic brand that is more than 100 years old because they are proud of their desserts,” he said.

Beckman suggested, in an exchange with Today Food, that the issue had occurred at some point along the production line and that efforts were underway to address it.

The company also apparently tried to get ahead of the social-media backlash by posting a message on Twitter showing a lineup of various types of Kisses, some of them with the tops missing, captioning the image: “Warm hearts this holiday season and take the time to celebrate our differences.”

That went over about how you’d expect.

“Weak try with the diversity distraction. Now, fix the problem!” wrote one unimpressed commenter.

“Address tipgate!” demanded another.

“Is this an ill disguised chocolate theft?” wondered a third. “Tips do add up!”

Others, however, saw opportunity in the missing tips.

“Hey #hersheys, PLEASE send me all the tipless kisses – It would never ruin my day to have chocolate!!!!!!” one wrote.

Chipotle-Raspberry Pork Chops

Ingredients

  • 1/2 cup seedless raspberry preserves
  • 1 chipotle pepper in adobo sauce, finely chopped
  • 1/2 teaspoon salt
  • 4 bone-in pork loin chops (7 ounces each)

Directions

  1. In a small saucepan, cook and stir preserves and chipotle pepper over medium heat until heated through. Reserve 1/4 cup for serving. Sprinkle pork with salt; brush with remaining raspberry sauce.
  2. Lightly grease a grill or broiler pan rack. Grill chops, covered, over medium heat or broil 4 in. from heat 4-5 minutes on each side or until a thermometer reads 145°.
  3. Let stand 5 minutes before serving. Serve with reserved sauce.

Linguine with Broccoli Rabe & Peppers

  • 1 package (16 ounces) linguine
  • 3 tablespoons olive oil
  • 2 anchovy fillets, finely chopped, optional
