White Chocolate Buttermint Ice Cream

Ingredients

  • 2 cups whole milk
  • 1 1/2 tablespoons cornstarch
  • 3 tablespoons cream cheese (softened to room temperature)
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon turmeric
  • 1 1/4 cups heavy cream
  • 2/3 cup granulated sugar
  • 2 tablespoons light corn syrup
  • 5 ounces white chocolate (high-quality, chopped)
  • 3/4 teaspoon butter extract
  • 1/2 teaspoon peppermint extract
  • 1/4 teaspoon vanilla extract

Apple Pie Ice Cream

Ingredients

  • 1 cup whole milk
  • ¾ cup sugar
  • 2 cups heavy cream, divided
  • Pinch of salt
  • 1 vanilla bean, split lengthwise
  • 1 cinnamon stick
  • 6 large egg yolks
  • 1 tsp. vanilla extract
  • 1½ tbsp. unsalted butter
  • 3 large apples, peeled and thinly sliced (I prefer Granny Smith for cooking/baking)
  • 1 tbsp. sugar
  • ½ tsp. ground cinnamon
  • 1-2 tbsp. dark rum (optional)
  • 1 cup graham crackers, chopped small

Nutter Butter Ice Cream

Ingredients

  • 2 cups of heavy cream
  • 1 cup of half and half
  • 3/4 cups of sugar
  • 1 teaspoon vanilla extract
  • 1/3 cup of peanut butter creamy or smooth
  • 1 c. Nutter Butter Cookies coarsely chopped

Directions

  1. In a large mixing bowl combine, heavy cream, half and half, sugar and vanilla extract. Mix until well combined.
  2. Pour into ice cream maker and prepare according to according to directions.
  3. When ice cream is about half done add peanut butter by the spoonful.
  4. In the last few minutes mix in the cookies or add these at the end by hand.

Coffee Hazelnut Ice cream

Ingredients

  • 1/3 cup (2 oz / 55g) granulated sugar
  • 2 tbsp corn syrup / golden syrup
  • 3 tbsp powdered milk
  • 2-3 tbsp instant coffee (depending on taste)
  • 2 cups (500ml) milk (anything 1% or above)
  • 1 cup (250 ml) light cream (aka single cream)
  • 2 tbsp cornstarch
  • 3 tbsp cream cheese (low fat is fine)
  • 1 heaped tbsp hazelnut butter (no added salt or sugar)
