  • 1 cup lightly packed fresh parsley leaves
  • 2 cloves garlic
  • 1 teaspoon pepper
  • 2 tablespoons olive oil, divided
  • 8 plum (roma) , cut in half lengthwise, seeded
  • 2 tablespoons shredded Parmesan cheese
