Watermelon Patbingsu

Ingredients

  • 2 cups dairy-free milk, frozen in ice-cube trays
  • 1 cup cooked adzuki beans
  • ½ – 1 cup watermelon, cut into bite-sized pieces
  • ½ cup homemade jelly, cut up into small pieces or set in moulds
  • ¼ cup of your favourite nuts, chopped
  • 3 – 4 Tbsp’s organic maple syrup
  • 1 tsp maple or vanilla or almond extract
  • ½ tsp coconut oil for toasting the nuts
  • Pinch of salt
