Traditional Dutch Speculaas Cookies


  • 1 3/4 cups self-rising flour
  • 1/2 cup sugar (donkerbruine basterdsuiker, see tips below, or pure raw cane sugar demerara)
  • 7 tablespoons butter (room-temperature)
  • 2 to 3 tablespoons milk
  • 3 teaspoons pumpkin pie spice (or speculaaskruiden)
  • 1/2 teaspoon baking soda
  • 1/2 orange (zested, finely grated)
  • 2 tablespoons all-purpose flour (or enough to dust the work surface)
  • 1 large egg white (beaten room-temperature)
  • Brown sugar (for sprinkling)
  • Flaked almonds (for sprinkling)
