Ingredients

FOR THE COOKIE DOUGH
  • 3 c. all-purpose flour, plus more for surface
  • 1 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 1 c. (2 sticks) butter, softened
  • 1 c. granulated sugar
  • 1 large egg
  • 1 tsp. pure vanilla extract
  • 1 tbsp. milk
FOR THE BUTTERCREAM FROSTING
  • 1 c. (2 sticks) butter, softened
  • 5 c. powdered sugar
  • 1/4 c. heavy cream
  • 1/2 tsp. pure almond extract
  • 1/4 tsp. kosher salt
  • Food coloring

Chicken Quesadilla

Ingredients

  • 2 tbsp. extra-virgin olive oil, divided
  • 2 bell peppers, thinly sliced
  • 1/2 onion, thinly sliced
  • Kosher salt
  • Freshly ground black pepper
  • 1 lb. boneless skinless chicken breasts, sliced into strips
  • 1/2 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 1/2 tsp. dried oregano
  • 4 medium flour tortillas
  • 2 c. Shredded Monterey jack
  • 2 c. shredded Cheddar
  • 1 avocado, sliced
  • 2 green onions, thinly sliced
  • Sour cream, for serving

Directions

  1. In a large skillet over medium-high heat, heat 1 tablespoon oil. Add peppers and onion and season with salt and pepper. Cook until soft, 5 minutes. Transfer to a plate.
  2. Heat remaining tablespoon oil over medium-high heat. Season chicken with spices, salt, and pepper and cook, stirring occasionally, until golden and cooked through, 8 minutes. Transfer to a plate.
  3. Add 1 flour tortilla to skillet and top with both cheeses, cooked chicken mixture, avocado, and green onions. Place another tortilla on top and cook, flipping once, until golden, 3 minutes per side. Repeat to make four quesadillas.
  4. Slice into wedges and serve with sour cream.

Sticky Buns

Ingredients

DOUGH
  • 1 packet “highly active” active dry yeast; or 2 1/2 teaspoons active dry yeast; or 2 1/2 teaspoons instant yeast
  • 7/8 to 1 1/8 cups lukewarm water*
  • 3 cups King Arthur Unbleached All-Purpose Flour
  • 6 tablespoons unsalted butter, at room temperature
  • 3 tablespoons sugar
  • 1 1/4 teaspoons salt
  • 1/4 cup Baker’s Special Dry Milk or nonfat dry milk
  • 1/2 cup instant mashed potato flakes
GLAZE
  • 1/2 cup light corn syrup or maple syrup
  • 1 tablespoon rum, optional
  • 3 tablespoons butter, melted
  • 1/2 cup Sticky Bun Sugar; or 1 cup brown sugar, light or dark, firmly packed
  • 1 cup diced pecans
CINNAMON FILLING*
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 tablespoon King Arthur Unbleached All-Purpose Flour
    * Or use 1/2 cup Baker’s Cinnamon Filling mixed with 2 tablespoons water

Sattu Cooler

Ingredients

  • 50 Gram Sattu Powder
  • 15 Gram Sugar
  • 10 Ml Lemon Juice
  • 100 Ml Water
  • 5-6 Ice cubes
  • 2-3 Gram Cumin Powder, roasted

Directions

  1. Take a vessel and pour water. Add sattu powder, sugar and fresh lemon juice in the water.
  2. Stir constantly to mix the ingredients properly.
  3. Take a tall glass and pour this mixture slightly below the rim.
  4. Now add a couple of ice cubes to make the drink chilled.
  5. Garnish the drink with a pinch of roasted cumin powder. It will enhance the flavour of your soothing sattu drink.

Soft Cheese Bread: Two Ways

Ingredients

  • 6 1/2 cups unbleached bread flour can use all purpose, if that’s all you have (28oz)
  • 2 tsp fine salt (0.5oz) or 1 Tbsp. coarse kosher salt
  • 5 Tbsp white sugar (2.25oz) or 5 Tbsp brown sugar or 3 1/2 Tbsp. honey or agave nectar
  • 1 cup lukewarm water (8oz) about 95F (for even softer bread, use 1 cup water leftover from boiling potatoes, cooled)
  • 1 cup plus 2 Tbsp lukewarm buttermilk (9oz) or milk
  • 1 1/2 Tbsp instant yeast (0.5oz)
  • 1/4 cup melted unsalted butter (2oz) or vegetable oil
Cheddar and Herb (to make one loaf):
  • 2 cups shredded sharp cheddar cheese
  • 1/4 cup minced herbs (parsley and chives are good choices)
Parmesan, Garlic and Herb (to make one loaf):
  • 1 1/2 cups freshly grated Parmesan
  • 1/2 tsp garlic powder (or about 2 tsp. minced fresh garlic)
  • 1/4 cup minced herbs (parsley works well)
