Ingredients

  • 2 tablespoons olive oil
  • 2 teaspoons chopped fresh rosemary, plus one 4-inch sprig
  • 2 cloves garlic, finely chopped zest from
  • ½ lemon, grated
  • 1½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • 1 lemon, halved
  • 1 3½- to 4-pound chicken, giblets
