Ingredients

  • 480g Coles Deli Salmon Fillets
  • 1 tablespoon miso paste
  • 240g ramen noodles
  • 400g frozen edamame or broad beans
  • 1 just-ripe avocado, stoned, peeled, thinly sliced
  • 1 large carrot, peeled, cut into matchsticks
  • 2 Lebanese cucumbers, peeled into ribbons
MISO DRESSING
  • 2 tablespoons salt-reduced soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon miso paste
  • 1 teaspoon finely grated ginger
  • 2 teaspoons sesame oil

Chocolate Reindeer Cookies

Ingredients

  • 2-3/4 cups all-purpose flour
  • 1-1/4 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3/4 cup butter, cubed
  • 1-1/2 cups packed brown sugar

Caprese Chicken

Ingredients

  • 1 tbsp. extra-virgin olive oil
  • 1 lb. boneless skinless chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 1/4 c. balsamic vinegar
  • 2 cloves garlic, minced
  • 1 pt. grape tomatoes, halved
  • 2 tbsp. freshly torn basil
  • 4 slices mozzarella

Directions

  1. In a large skillet over medium-high heat, heat oil.Season chicken with salt and pepper and cook until golden and cooked through, 6 minutes per side. Transfer to a plate.
  2. Add balsamic vinegar to skillet, then add garlic and cook until fragrant, 1 minute. Add tomatoes and season with salt. Let simmer until soft, 5 to 7 minutes. Stir in basil.
  3. Return chicken to skillet and nestle in tomatoes. Top with mozzarella and cover with a lid to melt.
  4. Spoon tomatoes over chicken and serve.

Lemon-Ginger Bundt Cake

Ingredients

  • 1 cup (2 sticks) unsalted butter, room temperature, plus more for pan
  • 3 cups all-purpose flour (spooned and leveled), plus more for pan
  • 2 tablespoons finely grated lemon zest and 1/3 cup fresh
  • lemon juice (from 2 lemons)
  • Loose Lemons 1 Each
  • 1/3 cup minced crystallized ginger
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 1/2 cups granulated sugar
  • 6 large eggs
  • 1 cup sour cream
  • Confectioners’ sugar, for dusting

Six-Grain Bread

Ingredients

  • 2 cups King Arthur Unbleached All-Purpose Flour
  • 1 cup King Arthur 100% White Whole Wheat Flour
  • 1 tablespoon vital wheat gluten
  • 1 cup six-grain blend
  • 1 1/2 teaspoons salt
  • 2 tablespoons sugar
  • 2 teaspoons instant yeast
  • 1/4 cup Baker’s Special Dry Milk or 1/3 cup nonfat dry milk granules
  • 1 1/4 cups lukewarm water
  • 3 tablespoons butter or vegetable oil

Directions

  1. Combine all the ingredients in a large bowl or the bucket of a bread machine. Mix and knead by hand, electric mixer or bread machine until the dough is smooth and supple, adding additional liquid or all-purpose flour as needed.
  2. Place the dough in a lightly greased bowl, cover, and let it rise for about 1 hour. (In a bread machine, allow the machine to complete its dough cycle.)
  3. Turn the dough onto a lightly oiled work surface, and shape it into a 9″ log.
  4. Place the loaf in a lightly greased 9″ x 5″ pan, cover the pan, and let the loaf rise about 40 to 60 minutes, or until it’s crowned about 1″ over the rim of the pan. Towards the end of the rising time, preheat the oven to 350°F.
  5. Bake the bread for 30 to 40 minutes, or until it’s golden brown and its internal temperature registers 190°F on an instant-read thermometer.
  6. Remove the bread from the oven, remove it from the pan, and allow it to cool on a rack.
  7. Yield: 1 loaf.

Cherry Vodka Lemonade Slushies

Ingredients

  • 2 tsp lemonade mix (I use 2 packets Crystal Light Lemonade)
  • 3 fl oz Skinny Girl Cherry Vodka, or your favorite cherry vodka
  • 1 1/2 cups water
  • 2 cups ice

  1. Add all ingredients into a high power blender and blend until smooth and slushie texture.
  2. Pour into 2 glasses and sip away!

Slow Cooker Tropical Pork Chops

  • 2 jars (23-1/2 ounces each) mixed tropical fruit, drained and chopped
  • 3/4 cup thawed limeade concentrate
  • 1/4 cup sweet chili sauce
  • 1 garlic clove, minced
  • 1 teaspoon minced fresh gingerroot
  • 4 bone-in pork loin chops (3/4 inch thick and 5 ounces each)
