  • 1/2 c. sour cream
  • 1 vanilla bean
  • 3 large eggs
  • 1 1/2 c. all-purpose flour
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 1/2 lb. rhubarb
  • 2 tsp. ground ginger
  • Whipped cream
