Tuna Fettuccine

Ingredients

  • 50 g whole almonds
  • 1 small onion
  • 2 cloves of garlic
  • 4 anchovy fillets in oil , from sustainable sources
  • Olive oil
  • 300 g dried fettuccine , or linguine
  • 4 baby courgettes , with flowers
  • 300 g yellowfin tuna , from sustainable sources
  • 1 x 400 g tin of quality cherry tomatoes
  • 1 lemon
  • 30 g pecorino cheese
  • Extra virgin olive oil

Chuck’s Favorite Mac and Cheese

Ingredients

  • 1 (8 ounce) package elbow macaroni
  • 1 (8 ounce) package shredded sharp Cheddar cheese
  • 1 (12 ounce) container small curd cottage cheese
  • 1 (8 ounce) container sour cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 cup dry bread crumbs
  • 1/4 cup butter, melted

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil, add pasta, and cook until done; drain.
  2. In 9×13 inch baking dish, stir together macaroni, shredded Cheddar cheese, cottage cheese, sour cream, Parmesan cheese, salt and pepper. In a small bowl, mix together bread crumbs and melted butter. Sprinkle topping over macaroni mixture.
  3. Bake 30 to 35 minutes, or until top is golden

Turkey Gobbler Cake

Ingredients

  • 1 box Betty Crocker™ Super Moist™ devil’s food cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 container Betty Crocker™ Whipped milk chocolate frosting
  • 1 marshmallow
  • Red colored sugar
  • 35pieces candy corn

Directions

  1. Heat oven to 350°F (325°F for dark or nonstick pans). Grease or spray bottoms and sides of two 9-inch round cake pans.

     

  2. In large bowl, beat cake mix, water, oil and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pans. Bake as directed on box for 9-inch rounds. Cool 10 minutes. Remove from pans to cooling racks. Cool completely, about 30 minutes.

     

  3. Cut 1 layer as shown in diagram (template can be found under the Tips below). Freeze cut pieces uncovered 1 hour for easier frosting.

     

  4. Place uncut layer on plate; frost top and side. Place cutout circle on larger layer; frost. Arrange head and feet on circle; frost.

     

  5. Cut marshmallow in half. Moisten 1 half and dip in red sugar; join to head with frosting for turkey’s wattle. Use other half of marshmallow for turkey’s eye. Use candy corn for beak, claws and feathers. Store loosely covered.

Chicken and Mozzarella

Ingredients

  • 4 Crispy Chicken Cutlets
  • 1 28-ounce can whole peeled tomatoes
  • ¾ teaspoon kosher salt
  • 8 ounce fresh mozzarella cheese, sliced
  • ½ cup loosely-packed fresh basil leaves, divided
  • Freshly ground black pepper, for serving

Directions

  1. Preheat broiler to high with oven rack in highest position. Arrange cutlets in a single layer on a wire rack set inside a rimmed baking sheet.
  2. Drain tomatoes in a colander (reserve tomato juice for another use, like making Bloody Marys). Crush tomatoes into small pieces with your hands; drain again. Transfer drained tomatoes to a bowl and stir in salt. Spoon tomatoes over cutlets. Top with cheese and 1/4 cup basil.
  3. Broil until cheese is melted and bubbly, 2 to 3 minutes. Remove from oven and top with remaining 1/4 cup basil and several grinds of pepper.

Crock Pot Whole Chicken

Ingredients

  • 4 teaspoons salt (per recipe reviews, 2 tsp is better)
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon onion powder
  • 1 teaspoon thyme
  • 1 teaspoon white pepper
  • 1⁄2 teaspoon garlic powder
  • 1⁄2 teaspoon black pepper
  • 1 large roasting chicken (with pop-up timer if possible)
  • 1 cup chopped onion (optional)

Directions

  1. In a small bowl, combine the spices.
  2. Remove any giblets from chicken and clean chicken.
  3. Rub spice mixture onto the chicken.
  4. Place in resealable plastic bag and refrigerate overnight. (I usually skip this step because I’m always in a hurry).
  5. When ready to cook, put chopped onion in bottom of crock pot.
  6. Add chicken. No liquid is needed, the chicken will make its own juices.
  7. Cook on low 4-8 hours.

Tips: I highly recommend a pop-up timer in the chicken because some crock pots cook faster/slower than others (my crock pot cooks this recipe in 4-5 hours).

Cranberry Spritzer

Ingredients

  • 2 cups cranberry juice cocktail
  • 2 cups sparkling apple cider
  • 5 strawberries
  • 2 1/3-ounce packages strawberry-flavored Pop Rocks candy (optional)

Directions

  1. In a large pitcher, combine the cranberry juice and cider.
  2. Cut 1 strawberry in half, rub the rims of 4 glasses with the cut pieces, and dip the rims in the Pop Rocks to coat (if using).
  3. Serve the juice mixture over ice in the prepared glasses. Garnish with the remaining whole strawberries. (For an adult version, add 1 ounce vodka to each drink. Enjoy after the kids go to sleep.)
